Bis heute wird es zu besonderen Anl\u00e4ssen gekocht &#8211; an religi\u00f6sen Feiertagen, f\u00fcr Familienfeiern.<\/p>\n<p>Dograma ist ein sehr nahrhaftes Gericht und wird immer in gro\u00dfen Portionen zubereitet, so dass es m\u00f6glich ist, hundert Menschen zu ern\u00e4hren. Dograma zu kochen ist nicht sehr schwierig &#8211; Sie brauchen frisches Lamm, Hausarbeit (turkmenisches Brot) und Zwiebeln. Lamm wird in einem gro\u00dfen Kessel auf offenem Feuer an der frischen Luft gekocht. Frisch gebackene Hausarbeit und gekochtes Lamm werden gek\u00fchlt.<\/p>\n<p>Dann beginnt die kollektive Dograma-Herstellung. Normalerweise nimmt die ganze Familie an dem Prozess teil. Brot wird von Hand in kleine St\u00fccke geschnitten. Das Wort &#8220;dograma&#8221; bedeutet nur &#8220;zerbr\u00f6ckeln&#8221;. W\u00e4hrenddessen werden kleine Fleischst\u00fccke von Lammst\u00fccken von Hand abgeklemmt, geschnitten und in Fasern geteilt. Dann werden alle Komponenten zusammengemischt &#8211; Chorek, Zwiebel und Fleisch.<\/p>\n<p>Vor dem Servieren wird eine tiefe Sch\u00fcssel zur H\u00e4lfte mit &#8220;trockenem&#8221; Dograma gef\u00fcllt und mit kochender Lammbr\u00fche, bestreut mit schwarzem und rotem Pfeffer, gegossen.
